Method
1. In a mixing bowl, season the eggplant with Salt, black pepper, and dry oregano.
2. In a heated pan, sauté the eggplant until it is cooked and set aside.
3. In a preparing bowl, arrange the eggplant, add cherry tomatoes, garlic, chili, and mozzarella cheese, and then add another layer of eggplant and cherry tomatoes. Top with mozzarella cheese.
4. Sprinkle with bread crumbs and drizzle with olive oil.
5. Preheat the oven to 200°C. Place the bowl in the oven and bake for 5 minutes or until the cheese is melted.
SERVING
