Method
1. In a clean bowl, wash the shrimp thoroughly and gently. Place them on a tray to dry.
2. In another bowl, combine the flour, cornflour, and all the spices. Mix well and divide the mixture into two separate bowls.
3. In one bowl, add cold water to the seasoned flour mixture and whisk until it becomes thick.
4. Add the shrimp to this bowl, mix well, and let it sit for 10 minutes on the side.
5. Remove the shrimp from the bowl and coat them with the dry flour mixture. In a deep, hot frying pan, fry the shrimp for 5 minutes until they become crispy. Set them aside.
6. In a mixing bowl, combine mayonnaise, honey, soy sauce, sweet chili sauce, and ketchup. Mix well and add all the shrimp to this bowl.
7. Stir well to coat the shrimp evenly. On a serving plate, arrange the shrimp gently and garnish with sesame seeds, spring onions, and Cajun spice.
